Talk about a last minute harvest! In this video i harvested the last Yacons just before a fairly major frost last night. Yacon tubers are edible and can be regrown from the crown growing tips next Spring. They do really well here in Ireland, however they are not frost hardy so it’s essential to store them in a frost free place for the Winter. The ones i am harvesting this time were planted about a month later than i could have, because we just finished expanding that part of the garden. They still grew remarkably well.
